Everyone knows you need to drink fluids while you’re sick, but it’s equally important to consume extra liquids after you’re feeling better. Food and Nutrition Director Brierley Horton, MS, RD says, “Do what you need to do to get rehydrated.”
Especially if you were running a high fever, liquids are essential. Be sure to drink fluids and eat water-rich fruits and vegetables such as grapes or cucumbers.
- 1 whole chicken cut into pieces
- Coarse Salt
- 2 celery stalks
- 6 medium carrots
- 4 garlic cloves crushed
- 3 medium onions thinly sliced
- 8 cups water
- 2 large mushrooms
Bring chicken, water, and 1 tablespoon salt to a boil in a large stockpot. Add onions, celery, and garlic. Reduce heat and simmer, partially covered, for 30 minutes.
Remove chicken breast, and set aside. Add carrots and mushrooms. Simmer, partially covered, for 40 minutes.
Remove remaining chicken and discard back and wings. Let cool slightly. Remove meat from bones, and cut into bite-size pieces.
Stir in desired amount of chicken and season with salt.
